Easy Cheesy Veggie Eggs

I typically find that some of the yummiest foods are the easiest and most simple to make.  This is my go-to weekend breakfast (and sometimes week day) that never fails to please me and the hubs.  It is also low-calorie, low-carb and high protein - LOVE!










Ingredients:
Eggs (I usually eat two myself, so for the two of us, I made four)
Dash of milk (for the scrambled eggs)
1/4 C chopped bell pepper
1/4 C chopped yellow onion
1/4 C chopped tomato 
1/4 C shredded cheddar cheese
Salt & pepper to taste



Directions:
1. Chop onion and red/yellow/green bell pepper - whatever you've got on hand.


2. In a medium non-stick skillet, sautee onions and peppers on medium-high until caramelized and slightly crisp - about 4 minutes


3.  While veggies cook, prepare eggs to be scrambled (I like to use a dash of milk in my eggs when I scramble them, it makes them a bit fluffier)


4.  Add tomatoes and sautee for an extra minute


5.  Add in the egg mixture and work with a spatula until scrambled, about 3-5 minutes depending on your heat.


6. When the eggs are scrambled to your liking, add the cheese!


7.  Mix until the cheese is melted and incorporated


8. Serve it up!  I served it with some sausage links and a small side of grits.


I'm also a huge fan of spicy things added to my cheese - so I added a bit of Sriracha (Rooster Sauce) to my eggs - SO good!


Again, this literally takes about 10 minutes from start to finish and is just plain yummy - a great start to the morning!

3. Stir and scramble for about 4-5 minutes
