Oven Roasted Brussels Sprouts

Ewww Brussels Sprouts!! Right?? WRONG! These are the vegetable I crave most in the winter.  I agree, the 'old' way of making sprouts can be less than appetizing - boiled and buttered into a mushy mess.  But this way will make a believer out of any Brussels Sprouts hater!  They are nutty, crispy, a little cheesy and oh. my. goodness. so good. SO good.
 



Ingredients:
Brussels Sprouts
1 tbsp olive oil
Salt and pepper to taste
Handful of pine nuts
1/8 C grated parmesan


Directions:
Pre-heat your oven to 400F
Prep the Brussels Sprouts - You'll trim the stalky end off and discard.  Any leaves that fall off should be discarded, as well as any brown/icky leaves that need to be peeled.



The image below shows how many leaves I had to discard from this pack of sprouts, sometimes there is half of this, other times there is more, just depends on the sprouts you pick out.


In a medium bowl, toss the sprouts in the olive oil, salt and pepper to coat well.  Use the olive oil sparingly -you want them to be coated, but not drowning in olive oil.





Place the sprouts on a baking sheet and cook them at 400F for about 20 minutes total, turning each sprout halfway through


When done, sprouts will be crispy, brown and smell nutty.  Take the sprouts out, place them in a bowl, andon the same cookie sheet, spread your handful of pine nuts and turn the oven on broil.  You'll broil for about a minute, but keep your eye on them! Pine nuts are expensive and you don't want to have to throw pine nuts away because they burned!


These are a bit more brown than I normally make them, but still tasty none-the-less. These were only under the broiler for about 40 seconds.(sorry for the blurry picture)


Toss the toasted pine nuts, Brussels Sprouts and parmesan together in the bowl and serve!


These were a side to Garlic Lime Chicken (which I'll post soon) and SO good.  You will love them!

1. Preheat the oven to 400F
2. Prep the Brussels Sprouts
3. Bake sprouts for about 20 minutes, flipping each sprout halfway through
4. When sprouts are done, place them in a bowl and turn the oven on broil
5. Toast the pine nuts under the broiler for a minute (or less) until golden brown
6. Toss sprouts, pine nuts and parmesan together and serve!

The nutrition information below is for a half container of Brussels Sprouts (even though it says entire recipe)

  1. This looks great! The special guy in my life hates brussels sprouts and I LOVE them. Maybe this will be a nice compromise.

  2. I hated them before I tried these. If you are unsure about making them, hit up Avalon in the Fan and see if he likes them there - if so, golden :)
